In 20 Questions !

1. What?s your real name, do you have a nickname & how old are you?
I was born ? Pandelis but had to change it to Paul to Australianise it, as it got everyone tongue tied


2. Where were you born and where do you live now and how was that journey?
I was born in a town called Florina in Northern Greece in the late 50s during the winter
Departing from the port of Piraeus, Athens during the winter of 1968 my parents with myself and younger sister in tow emigrated by ship to Australia
Having to skirt around the west coast and round the cape of Africa because the Suez canal was closed NOTE - The Suez canal was closed from 1967 to 1975 due to hostilities between Egypt and Israel
I remember we stopped in Gibraltar where small craft came along side and were selling there wares ? we still have that tapestry of president Kennedy that my parents purchased
The trip at times was rough and travel sickness came easy
We reached Australia from memory around January of 1969 at the port of Fremantle WA , afterwards travelling to Melbourne and finally Sydney where we disembarked to our new life in Australia
But after emigration checks ect we then travelled by car to Newcastle a 2 hour trip in those days
This brings back memories ? on the way to Newcastle one of my distinct childhood memories is stopping at the OAK milk bar in Peats Ridge I thought I was in heaven

Now living in Brisbane Australia with my wife & family we moved here 1982 / 1983


3. Describe your idea of relaxation for us...
Believe it or not I like to day dream and I consider it to be equal to yoga
I also like inventing and problem solving and although this keeps the mind active it is also relaxing
And finally listening to music or reading books


4. Are you currently reading a book? Or perhaps even better; what book will you be reading next?
I am an avid reader I have a preference to -
Crime Novels, Sci Fi, Horror but I also like information books
Having said that I have read almost every comic book that was ever published in my younger days
And I never purchased any sea monkeys or X Ray glasses that were always advertised inside there pages

6. How did you find HRO
I joined in 2008 and if you want an honest answer ? My first post was DIY roaster I built and wante to share it with the world

7. Favourite meal/recipe or two?
How about I list some of my favourite foods ? Always liked - egg plant, lentils, endive, sweet chillies, ginger beer, fish ,chicken, lamb & beef also feta cheese, olives, and syrupy Greek sweets, nuts of all varieties and watermelon with haloumi cheese

8. With what movie/TV character do you most identify?
My humorous side comes from - Peter Sellers, my inventive side comes from Prof Julius Sumner Miller, my artistic side comes from Vinyl Record cover art


9. Do you have any motto?s, sayings, or quotes to live by?
Let it be known ?I? in Greek means ?ego? please replace it whenever possible with ?one or we?


10. What has been the best advice you've gotten from a HRO member
With all things Coffee I am usually the one giving advise
However we all have talent?s in other areas & I thank the IT savvy members with computer and new gadget related advice


11. How do you take your "everyday" coffee?
Flat white a few times a day and don?t mind a brew of Greek/Turkish coffee


12. What made you take coffee a step further than most people you know?
I grew up with coffee from early childhood & grew up with family members owning cafes ? so I suppose the answer is that it was always a part of my life


13. What?s your preferred roast level?
My taste buds like it at the magic trifecta ? 1) Just before second crack 2) Just on second crack 3) Just after second crack


14. What equipment do you have at home?
A Lever Machine ? the New Bezzera Strega Lever HX with a BNZ MD74 conical grinder


15. Any upgrades in the future?
I don?t think so, but if an upgrade is in the works, you will be the first to know


16. Conical or flat or doesn?t matter?
Used both and like both, but eventually settled on a big conical


17. What is your go to bean or blend, you know the one that makes you go ahhhhh?
I change with the seasons ? so variety is the spice of life for me , I sometimes pick a blend with Eeny, meeny, miny, moe as a surprise factor


18. Hypothetical. You win lotto and can buy a new machine & grinder but only one of each?.What do you choose & why?
Not sure if I would change what I have now ? but a unique set of cups would be nice as I have recently broke a few in an accident


19. If you could give one piece of advice to someone new to coffee, what would it be?
Don?t forget ? Its the human factor that makes the difference, so don?t blame the machine while you are on L plates


20. Any last words?
Offer your help without expecting anything in return ? this simple gesture goes a long way



BONUS QUESTION:
Most of us know you as the guy behind the KKTO. Would you mind telling us how that all began and where you think it will go from here?

This has been published in my blog and its hard to put it in a simpler way
The KKTO roaster design was conceived with both my requirements and my wife?s requirements


I wanted
1] large green bean volume 600grams to 800grams
2] easily repeatable roast quality


My wife wanted
1] "no clutter and no mess"
2] be able to be packed away with ease


So the design dilemma was how to make a "home" roaster that had
1] A large capacity,
2] Beans roasted to shop quality,and a decent volume
3] Was small and dainty and made no mess


It took a while and a few day dreams later I made a prototype. My wife was pleased that the roaster was small and also collected the spent chaff. And I was pleased with the capacity and the overall roast quality. The original design concept was made available at first in 2008 and in 2009 I published the build details and offered them free to all KKTO ? DIY ers. You can find it here:

Met wife, Julie, shortly after moving to Colorado in the 80's.
Two kids, James who's in the Air Force and Melissa who's attending college for hospital administration.

Hobbies: Coffee roaster building, woodworking, guitar making, study of 1st and 2nd Jewish Temple and Temple mount in Israel.

Occupation: Building facilities and mechanical plant maintenance. In 2003 worked for a few years managing the service shop and roasted coffee at a mid sized coffee roaster in Boulder Colorado.

First meeting with real coffee: In early 1980s ran into an artisan roaster/retailer called The Brewing Market in Boulder Co. They forever hooked me on fine coffee.

Joined HRO: February 2010 while searching the internet for info on larger fluidbed home roasters.

Favorite coffee varietals: Kenya, Guatemalan, Ethiopian Yirgacheffe.

Preferred roast level: Just enough past 1C to pull maximum varietal flavor characteristics.

Favorite brewer: Siphon brewer

Favorite roasting machine: Drum (but love them all)

Scott Williams. Unmentionable nickname. 48.


2. Where were you born and where do you live now and how was that journey?
Born; Lexington Ky. Currently (and mostly) call Rochester Ny home. The initial journey was not my doing. All the other locations were my doing. ..many with the military.

3. Describe your idea of relaxation for us...
Cooking, tinkering in the shop, snoring in the shade, to the din of cocktail blenders.


4. Are you currently reading a book? Or perhaps even better; what book will you be reading next?
I have a pile of National Geographics, books (non-fiction) and various other materials that may never get read. (See #5)

5. Working, studying, retired?
Always, always, never.

6. How did you find HRO?
Poking around the web for coffee roasting info, I would often find links to various posts at HRO. From there, I just started digging.

7. Favourite meal/recipe or two?
My "favorite" anything....is a moving target. I'm currently drawn toward more ancient foods and open hearth cooking.


8. With what movie/TV character do you most identify?
Somewhere between "Dirty Harry" and "Bugs Bunny".


9. Do you have any motto?s, sayings, or quotes to live by?
"Life is short, use real butter"

10. What has been the best advice you've gotten from a HRO member

11. How do you take your "everyday" coffee?
Mostly super-auto, tall. Ibrik whenever possible. Vintage vac-pot for something special.

12. What made you take coffee a step further than most people you know? A love of food, a mild neurosis, coupled with a bit of mechanical skill.


13. What?s your preferred roast level?
That really depends on the bean, but mostly City...stretched a bit for the super-automatic

14. What equipment do you have at home?
Roasting; none at home. At the shop; 1lb electric fluid-bed (MH-1), 5-7 lb propane fluid-bed.
Brewing; not alot at home. A Miele super-auto, a dusty Technivorm, and a well used, ancient Ibrik.

15. Any upgrades in the future?
Brewing; no. Roasting; always. Increase capacity, Rethinking bean flow inside the RC (fluid-bed). Higher pressure, more compact combustion. CO2 cooling.
Pressurized evacuation.....to name a few.

16. Conical or flat or doesn?t matter? I'll skip both. Vacuum/Siphon.


17. What is your go to bean or blend, you know the one that makes you go ahhhhh?
Whatever is unusual would be my first choice, beyond that, always drawn to the older varietals. start in Africa, move out from there.


18. Hypothetical. You win lotto and can buy a new machine & grinder but only one of each?.What do you choose & why?
Iron skillet with mortar and pestle. Why ?
As the world suffers the ravages of the zombie apocalypse, I will be sipping a tasty cup of turkish. No power? ...no problem.


19. If you could give one piece of advice to someone new to coffee, what would it be?
Be aware that alot of what you think is true...may not be accurate. The learning is the great part, but you have to be open to it.

20. First introduction to home roasted coffee?
A far flung air-strip on the island of Masirah...1986ish. Roasted in a pan, ground on the spot, served to us by some fantastic gents that spoke no english. I offered cigarettes...friends were made. Powerful moment....changed my perception of what coffee meant.

John Couillard-Despres, no nickname, 54.

2. Where were you born and where do you live now and how was that journey?
I was born in West Michigan and still live here. The journey was short.

3. Describe your idea of relaxation for us...
Hanging out with friends and enjoying conversation is becoming more and more valuable as I collect years.

4. Are you currently reading a book? Or perhaps even better; what book will you be reading next?
Current - "Slating The Badger" by Richard Moore
Next - Dunno... I have lots on the shelves I haven't read yet, so it depends on where I feel like going.

5. Working, studying, retired?
Working, studying and not retired.

6. How did you find HRO?
Ginny kidnapped me and dragged me here.

7. Favourite meal/recipe or two?
I'm a macrobiotic, vegan, vegetarian, carnivore who loves bacon. My wife is a gourmet cook so my favorite meal/recipe is typically what she's made most recently.

City plus for the most part, but there are some that certainly need to hit Full City Plus.

A large collection of brewers, grinders and a few roasters. Regular stuff, really.

No, not in the coffee genre; I think I'm set there. Bicycles, however...

Chemex when using a paper filter.

17. What is your go to bean or blend, you know the one that makes you go ahhhhh?
Pretty much anything from Ethiopia.

I already have a Mazzer Mini, a Technivorm and a Quest M3. I think I've topped out...

"Try this. Tell me what you think." Then the real conversation begins.

My wife introduced me to her high school friend's husband who roasts. It took a few years, but I eventually jumped in.

21. Hobbies?
Two for the most part - Coffee roasting and bicycling. I try to hit the road as often as possible. There are other things, like gardening, guitar, traveling, but the first two are the big ones.

22. Anything significant to add?
My 11 year old son is the best. I teach Art Direction at film conservatory, I am partner owner of one business, own another and am a sculptor. And I was awarded an EMMY for art direction for the TV show "Come On Over!" That is all.

Preferred roast level: Just to first crack and a bit beyond. Never second crack.

Favorite brewer: Clever coffee dripper - I am the only one drinking coffee in the house.

Brewer I would love to own: Always wanted a Vacuum pot brewer.

Favorite roasting machine: My current KKTO but would own them all if I could afford it.
