Shortening a thermometer?

I have a 12" long thermometer probe on an analog candy thermometer and it's just too long. Can it be cut and shortened?

I dont think so.. i think the inside is the same as a car version and i cut that once and all the fluid came out... but i might be wrong. the digital ones are an electrical thing on the end and the length i believe is just length, the temp sensor is at the end. hope that helps
