Steel for RC

I'm confused by hot rolled, cold rolled, etc. options for steel but would like to purchase some steel to weld up a new RC. I'm open to aluminum as well but would love any advice for gauge and type.

Oh, it's for a fluidbed roaster hoping to push 1kg+ so square, round, whatever works for me.

Stainless is really best for what touches the beans. But you'll need argon gas with your oxygen.
You'll need to grind/polish it because it looks ugly dark without the helium.?
I go to the scrap yard here for everything metal...
I would think the glass would be the hard part. (round).
If square, how would you keep it air tight? hmmm?

There is a glass that can be good for you, no idea if it can be found as spare where you live... It is part of a hot dog maker machine; check here and will understand in a blink:

The dimensions are: length 24 cm, OD 20 cm, ID 19 cm, thus wall 5 mm thick.
The size is close to the typical 1 kg drum roaster, for FB you need more volume, maybe a steel pipe as lower RC, combined with this glass in the fountain/exhaust area.
The glass is thermal resistant, already experimented with.

Unfortunately, the "glass" is plastic :(
Steam resistant plastic, but not 250C
