Reduce air in storage jar.
oldwood
I have been using the glass jars with bamboo lids with a silicone seal, but was concerned about the amount of air in the jar. I trimmed the outside of the lid so it will slide down inside the jar and also added a handle to the lid, and drilled a hole in the lid that will accept a one way valve I cut out of coffee bean bags. I have a lot of empty coffee bean bags ;) I use another lid on top, so I have a double seal.

I keep the beans in a vacuum container until I put them in these jars for use.

Basically a homemade Airscape. Nothing wrong with that. Once again, coffee making those brain cells sparkle.

The Airscape was the inspiration for this, for sure. The Airscape is $60.00 in Canada and this was a quick modification of a $6.00 jar so although it does not have all the features it is close enough.

I'm lost.
I buy 30-50LBS of beans.
I put them in 5L glass hinged air tight jars.
Is that wrong?

For greens nothing wrong, for roasts ... never experienced an attempt to "take-off" the lid when first opening?

Here pro roasters are storing roasted beans some days, before packing, in suck containers, with vent hole, (not unidirectional valve):

They demonstrated me the behavior of the lid for a canister with vent hole intentionally closed, the lid jumped up some 2-3 cm, with a characteristic depressurization sound, of air escape.

I use these for roasted beans. For green, I just keep them airtight and in a cool, dark location.

Go bottom of page, expand Packaging. Long story: a big No for the valves.

Interesting take on storing roasted beans. I do both. I store in Mason jars with what are supposed to be one -way valves in the lids, but I also use quart-size freezer bags that I burp as necessary to prevent swelling of the bags. Most bags will puff up some on the first day or two, then settle down to merely having a slight vapor space. I usually leave them alone at this point until I open for grinding. The person writing the article confessed to being somewhat on an island with their storage strategy/philosophy.
